SSB Week 2: Overbudget! Stocking up, dogs are expensive and Valentine’s Day 

This week was a busy one with lots to get done. We did overspend.

We had to get a big bag of dog food, so that was $65. Hopefully it lasts a month or so!

Speaking of, evidently our bigger pup Jasper thinks this bed for Sunshine is his size:

That’s kind of how our budget was for the week.

This week was a bit of a splurge when it came to our food. I got some chocolate-covered strawberries for the Super Bowl, and I stocked up on a BOGO deal from Publix for frozen Springer Mountain chicken, so that was another reason we were over-budget this week. I am glad though, because we will use these the rest of the month!

On Monday, I tried making a keto chicken bake with the Springer Mountain chicken. It was so good! 

For Valentine’s Day, we had a gift card to Longhorn my mom had given Justin for Christmas, so we went there. We spent a little more than the gift card, but we had leftovers for the next night. Celebrating Valentine’s on a Tuesday night was a great idea, since there were no crowds. We bought our cards before the challenge started, and Justin was not content to not at least buy me flowers. 

I also couldn’t help but send my grandmother flowers for Valentine’s Day. I had them Instacarted from Costco, along with some heart macaroons. (She is 99 years old!) 

I had a gift card one of Justin’s brothers had given me awhile back for The Cheesecake Factory, and so I picked up two slices. Obviously, not keto. But I got the sugar-free cheesecake and that was tasty! So tasty, in fact, I forgot to take a picture before it was gone. We stayed in on Valentine’s Day and played chess. I ALMOST beat Justin, as you can tell. I will one day!  

Our meals for the week included beef tacos with keto tortillas, the chicken bake (x2), Longhorn, Longhorn leftovers, a shrimp cauliflower rice with ingredients left over in the freezer, and burgers.

I also made it to Trader Joe’s this week and got a couple of great deals there:

The budget for the week was kind of a wash because we had a bigger spending week. I started the month watching my weekly spending, but for the remainder I’m going to focus on the month. We have approximately $370 left for the month after some other expenses. Hopefully, this coming week will be more budget-friendly since we won’t be going out to eat.

Something silly: I found this fun treat to make if there is anyone you need to get back at for Valentine’s Day or look ahead to April Fools. 🙃
